Hope You Gotta Sweet Tooth'!

So here we go with your deserts. There's nothing like finishing off a nice Italian dinner with some hot coffee and something sweet. We have some awesome deserts here and you should take full advantage. I didn't get their descriptions yet, but at least you can see what they look like.Here they are!

1. Carrot Cake


































2. Perfiteroles filled with Gelato- Covered with hot Fudge.Check in the kitchen for the flavors of the day! It now comes 3 to an order.

A Few Salad's and A Few Panini's'

Ok. So I hope all is well with the training so far. We are now gonna post, a few salad's and a few panini's! The final menu is coming out soon, and we are going to get rocked before Christmas time, so get ready! Here is da food!
1. The BLT Salad- Baby Iceberg lettuce topped crispy Applewood smoked Bacon and Pomodorini tomatoes and a simple Blue Cheese.

2. Roasted Beets & Burratta- Beautiful Buttered Burratta Mozzarella cheese and Vibrant beets served with Pistachios, Currants, Arugula, Taggiasca Olives, Micro Greens and EVOO.

3. Mario's Famous Gorgonzola House Salad- Hearts of Romaine with Gorgonzola cheese, olives, Sweet Cherry Tomatoes, Belgian Endive, and EVOO. Grilled Chicken can be added for an Extra Charge.
 4. Italian Salad- Hearts of Romaine and Iceberg lettuce topped with A Hard-Boiled Egg, cucumbers, pomodorini tomatoes, celery, ceci beans, olives, red onions, oregano, red wine vinegar, EVOO, pepperoncini, wine vinegar, and Parmesan cheese.













5. The Panini- We have several Panini's. They are served with fries or a small salad.














6. The Caesar Salad- Traditional'. Hearts of Romaine with Caesar dressing topped with Parmesan cheese and Croutons. Anchovies upon request.

7. Caprese Salad- Simple! Local Vine Ripe Tomatoes, Cow's Milk Mozzarella, EVOO, Olives and Basil. Nice'!

Round 2-The Money Makers-"Entree's and Pasta's"

Alright. We are jumping right into the Entree's and Pasta's. These items are the meat and potatoes of Mario's Osteria's menu. There is a lot of them, so please try and follow Sande's rule of being able to sell several menu items for each section. You should know these items from top to bottom. Also try to focus on our signature items like the Chicken Scarpiello, as well as items that you like and are personal to you. Now get your Bobby Flay going'!





1. Chicken Scarpiello- "Signature dish since 1985"- your choice of on the bone or boneless breast. It has a white wine sauce, with pepperocini, broken cherry peppers, roasted peppers, calamata olives, Sicilian olives, artichokes, and a pasta Scarpiello sauce.

2. Veal Chop Milanese- Bone in Veal Chop, breaded and fried, then served with an Arugula Insalata Mista. ( Remember that the Veal Scaloppini Milanese doesn't have the bone, and is a smaller portion, so if they order the Scaloppini Milanese, suggest the "Chop" instead)

3.Rigatoni Vodka- Beautiful Big Rigatoni Pasta served in a Pink Vodka sauce, with Sweet and Mild sausage, basil and Asiago Cheese.                                                                                 
4. Baked Ziti Mario- Ziti Pasta baked to perfection with Ricotta, Mozzerella, Parmesan, and San Marzano Sauce.

5. Pork Chop Guido- Berkshire Kurobuta Pork "The Very best Quality" "Guido Style"- Pan Seared, with Hot and Sweet Italian Vinegar Peppers, onions, and Potatoes Vesuvio'.














6. Lasagna- "Signature Dish Since 1985". Not your everyday Lasagna. Fresh Thin sheets of Pasta loaded with Ricotta, Mozzarella, Asiago cheese, Marscapone,  and a Veal Bolognese.

7. Eggplant Parmigiana- Fried Eggplant baked with Mozzarella and Marinara. Notice the parsley.

8. Braised Short Ribs of beef with Polenta- Forever braised short ribs served creamy polenta and served with Tuscan kale.

9. Chicken Milanese- Scaloppini style chicken cutlet breaded and pan fried to perfection. Seved with Sweet and Hot fried peppers. 

10.Roasted Lemon Chicken, "Frascati Style"- Beautiful roasted chicken made with lemon, Rosemary, white wine, Artichokes and gray salt. Served with fingerling potatoes.

11. Lamb Chops Scottadita- Double cut Lamb Chops grilled to perfection then served Broccoli Rappini and roasted potatoes, garnished with rosemary. Don't forget to get a temp'!

12. Fish Francese- Sole or Snapper- Fresh catch of the day egg washed and pan fried to perfection served in a white wine sauce with capers and artichokes. a side of garlicy spinach completes the plate.

13. Jumbo Sea Scallops, Dry Diver- Pan seared Jumbo Scallops served over a Sweet pea and Asparagus Risotto. 

14. Lobster Tails Francese- Twin African Lobster Tails in a lemon butter sauce served with our Homemade Tagliolini pasta.

15. Orcchiette and Broccoli Rappini- Authentic Orcchiette and Broccoli Rappini served with sausage in a garlic and olive oil sauce.

16. The Filet Mignon- "Char-Crusted" and grilled. Cooked to your liking and then served Creamy Parmesan Mashed potatoes and roasted asparagus. Garnished with Rosemary.

17. Fedelini and Clams- White or Red. Fedelini pasta served with clams, Italian parsley, chilies and an Aglio E Olio sauce.

18. Marsala, Veal or Chicken- Scaloppini style Veal or Chicken served in a Marsala, and white wine sauce made with baby Shitake mushrooms.

Appetizers "Food Roll-Out" #1...

As you know, test 1 will be on the food we saw and ate during the first "Food Roll-Out". Here are the Appetizers we were able to touch, smell, look and taste....



1. Sicilian, White Anchovies- About 12 white anchovies, Sardine like, served with Taggiasca olives, Tuto Calabria peppers, and some Crostini's.

2. Red Roasted Peppers- Beautiful Red Roasted Peppers with the skin off and marinated in EVOO, served with Pignoli nuts, Currants, Basil and Sea Salt.











3. Olives of the Mediterranean- A plethora of different Olives of the Mediterranean marinated with EVOO and accented with a touch of cinnamon and rosemary.  




4. Calamari' Simply Fried- Floured and Fried, served with Mario's signature Marinara.












5. Calamari Fra Diavolo- Pan tossed Fried Calamari tossed with Hot Peppers and San Marzano sauce.

6. Meatballs with Fried Peppers- Mario's signature Meatballs made with Beef, Veal, and Pork served with marinara, fried peppers and a scoop of Ricotta.














7. Eggplant Pancakes- "Signature dish since 1985"- 4 to 5 pieces of fried Eggplant cut 1/4 inch , breaded with Panko bread crumbs, then stuffed in between is Asiago, Parmesan, cow's milk Mozzarella and Feta. Served with San Marzano Asiago Syrup.


8.Octopus, "Calabrese Style"- Octopus from Portugal, Grilled to perfection and served with Pomodorini Tomatoe's, fingerling Potato's, and Haricot Verts.

9. Beef Carpaccio- Thinly sliced Tederlion beef served with Truffle oil, arugula, slivered Radish, then topped with shaved Reggiano cheese, cracked black pepper and gray salt.





10. Baked Clams Oreganata- 1/2 a dozen middle neck tender Clams stuffed Oreganata style with Italian bread crumbs served with a White Wine, Lemon sauce made with butter and Clam stock and topped with a fried pepper Brushetta.

11. Baby Artichokes- Beautiful Baby Artichokes served roasted Garlic, Lemon, Rosemary sprigs and Parmesan cheese.

12. Shrimp Scampi Brushetta- Shrimp Scampi Sauce with 3 whole 16-20 count shrimp and one broken 16-20 count shrimp with peas Bianco topped on a crispy Brushetta.

13. The Antipasto- Family size only! It has Da Meats'. Soppressata, Salami, Prosciutto, and Cappacolla! Then it has Da Veggies. Artichokes, Olives, Sweet CherryTomatoes, and Red Onion. And Da Cheese'. Mozzarella Cellincini (small balls), and Reggiano  Parmesan. Complimented by a Garlic Brushetta...Nice'.

So there you have it! The Apps! All but the Sausage and Peppers, which you can figure that one out by yourself. Study up, and lets nail this test! Salads, Pasta's and Entree's to come!!

Wazzzz Upppp!!!

How ya all doin? Just wanted to say hi and thank you to all my new co workers. I think that the potential for this restaurant is enormous! Mario's of Boca was a huge success before and its going to be better with this can't miss location. As you know, we are racing against the clock, trying to get trained and ready for the opening, and we as a team have to work together, to get ready to rock and roll on day one. I noticed that a lot of people didn't have camera's handy during the first food roll-out, so I thought I would post this blog showing the pictures of the food just in case any body missed it or can't remember what certain dishes looked like. I want to make one thing clear hear however. This is not a work sanctioned blog. This is simply "Me" just posting the pictures I took the other night with there descriptions. There for, any wrong information can't be held against Sande and the Moario's Osteria management staff. So let's get started.
